What company did some of the other fire conversions such as Impd's DOKA?
Was there a department of the National Feuerwehr for vehicle conversion and kitting out? If so, where was this and what info is out there about it?

No, it's always private firms for vehicle conversion and kitting out.
Most known are METZ, ZIEGLER or ROSENBAUER from Austria. There are loads of others less known e.g. BARTH (!).

would you believe it, but mine was owned by a furniture manufacturer for two years before it became a fire truck, and its original colour was burgandy

That's very likely, lots of fire trucks started their life at a different business, see Stephan's at the 'T2 Feuerwehr/Polizei' thread.
In case of your's missing converter's stickers/badges and the black bumper corners (there were and still are 'correct' white ones available) are a further hint.
Such a vehicle wasn't necessarily sent to a converter but was sometimes kitted out by the fire fighters themselves. A good opportunity, to reuse 'old' parts hanging about like your huge searchlight.
